Roasted Pumpkin for my Pumpkin!

This past week, in the spirit of Halloween, I decided to whip Emma up something extra special to give to her as her newest food. Seeing as it is Halloween week I of course decided to begin her on PUMPKIN! Yummy! Pumpkin served by itself as a vegetable may sound a little bit strange to a lot of people but I assure you that it is actually quite nutritious!

Pumpkins are a member of the gourd family and unlike most vegetables contain small amounts of protein. They are also high in beta-carotene (as are most orange vegetables) and contain high levels of carotenoids which are known for their inate ability to keep the immune system strong. A wonderful thing during this time of year when cold and flu season is on the horizon.

I was wondering how my little pumpkin would take to her roasted pumpkin since it's flavor varies slightly from the squash that she typically eats. Despite my fears, my little pumpkin loved her Halloween treat and likely would have eaten it until she popped had I allowed her to do so. Such a good little (or should I say big) eater! With the exception of her second time eating sweet potatoes, Miss Emma has yet to turn down a single food! Impressive considering I serve her foods such as beets, asparagus, avocado, broccoli, and mango. Its a good thing she does not seem to mind eating a wide array of fruits and vegetables because living with Issac and I (who are both AVID health nuts) junk food will never be an option!
